This soup would be absolutely refreshing on a hot day. If you do not have hemp, avocado would work well as a substitute.

Ingredients:
1 large or two medium cucumbers, peeled and seeded
2 green onions
.75 ounces dill (one herb pack, a little over 1/3 of a cup)
1 tablespoon + 1 teaspoon lemon juice
1/4 teaspoon salt (adjust to taste)
1/2 cup hemp seeds
1/2 cup of water to get the blender going
drizzle olive oil

Preparation:

Blend everything in the blender. Adjust lemon and salt if needed. Garnish with a drizzle of olive oil. Serves: 2
